I don't know every damage type of every monster, but i know the moment i got chaos res capped i stopped dying to the bs that is effects that kill you after you defeated the rare. And there are a lot of those in harvest.
I assume the most damage comes from a combination of cold damage and being shocked technically, because the monsters from the blue juice can delete you very very fast and they def have some cold action going on. One rare lets it rain down on you and the projectiles from the snakes that come out of the ground can also just delete you if you don't move fast. Ailment immunity goes a long way, chaos res is important in harvest and being spell suppress capped is a luxury that pays off if you can wing it. At that point you shoudl pretty much be able to stand still and not die unless you clicked to many altars or sth^^ And i forget the goated phys taken as fire/lightning/cold damage. THis mod can make all the difference in the world between getting one shot by a big phys hit and barely survive to press the insta life flask. Depends on the monster, which depends on the crop type.
Most people target yellow crops because yellow juice has way higher trade demand. Yellow crop mobs do various flavors of yellow and green attacks, which are all pure chaos damage or some mix of physical + chaos. If you try harvest with delirium, than throw in all the black/grey delirium stuff, which is also heavy chaos damage. The blue and purple crop monsters should do mostly elemental damage or physical + elemental mixture. The real threat in harvest are the lingering ground effects from the normal (white) mobs dying, which leaves purple fissues, blue blobs, etc., which the following rare mobs (e.g. goatmen caster) detonate. |

I think there is a range of pretty much all the damage types, depending largely on the mob type. If you want to avoid a certain damage type, it is probably possible to find out which are the harvest mobs that do that damage, and avoid those seeds, or that specific mob if it is in the list. I think they are generally pretty grouped together. Usually when you spawn a group, they do a fair similar type of damage. That may not go for all of them, but it seems generally to be the case to me. PoeDB might be able to give you some more specifics on the skills and damage numbers.
